What gear at what MPH??

When I'm accelerating I do it pretty much like AdrianVall. But if I'm, say, in a residential area cruising at 30mph and I want to quiet the bike down I'll dropped it in to 3rd at this speed.
I'll usually only do this when I know I don't need to accelerate quickly, if it's typically flat terrain (i.e., I don't want to put a heavy load while slightly lugging the engine), and if I know I'll be at this speed for a descent distance.

I have a stretch of road that I need to do around 35 or less on and it seems like I try to stay in second as much as I can, but pull third if it seems like it’s revving a bit too high. That’s generally because I tend to go more than 35 though.
My biggest issue seems to be losing track of what gear I’m in and having it in fourth at 55+. There’s just enough road noise by then that I can’t hear the motor – it’s so quiet compared to my Nightster. I guess this is more of an issue when I’m accelerating quickly and then chill around 60mph.

If I am excellerating hard, I'll shift at about 4,000.

That's why I have a tach. I still have stock pipes on my '09 SG and couldn't hear the pipes over 40 mph. Now I glance at the tach every once in a while and ride between 2,000 and 3,000 rpm. This keeps me in the range most have mentioned.

... which by the way, you won't because the HP and torque fall off at the high end on these motors.
