You can modify the baffles. I have Santee 45 Caliber Shotgun pipes on my bike. They look pretty much identical to yours and the V&H Longshots. The baffles that came with them were like 16" long. I cut all but about four inches off them, then installed them. They still aren't as loud as running with no baffles, but are lound enough for me and have a really good sound to them.
Do you have some type of fuel management on your bike, like the Fuelpak or Power Commander. As long as you do, and the bike is tuned right, you should be fine.
Been running mine that way, with no fuel management, for 9,000 miles with no harm to the engine.
Ok, wasn't sure about running open pipes without some kind of fuel management on the newer injected bikes. Seems like it would be lean, but don't know.
Hell yeah man.. they look sick on your ride. Just pull the baffles on you'll be good to go. They sound quiter since they are behind. Thats what I hate about my thunderheaders.. they sound to quiet to me, but when I hear someone else riding my bike, they sound AMAZING. The longer pipes all have the same effect.
I've been lookin at these pipes for my Street Bob. I like the look and the price. How are they overall?

Mine dynoed at 117.3 horsepower and 121.8 ft/lbs of torque but mine are on a Screamin Eagle, with the 110 inch engine, and I did spend a lot of time looking for a dyno tech that really knew what he was doing.
