My guess... When you converted the red painted area (mask) in the first photo to black for the second photo, the software seen the red of the reflectors and converted that to a shade of black as well. When choosing a color for masking try to pick a color not in the original photo. That way if you wish to change it nothing else gets changed.
For those wishing to give it a try do a search on google for "gimp2" it is free opensource software that has similar functionality to photoshop.

The only downside to doing what you're trying to do is that if the bike owner doesn't have photoshop, they won't be able to use the file you send them. Once you save it as a jpg it will no longer have the mask in it to accept different backgrounds,etc. You'll have to save it as a photoshop file.
I've messed with photoshop a bunch while bored as heck at work. I've tried doing what you're doing and it doesn't work unless you leave it as a photoshop file.
Also, I found using the extract tool works much better. you can get really close to your object. it does take a decent amount of time to extract an object from a photo though.
