I have done a bunch of research on this and my conclusions are as follows:
Engine - AMSOil Synthetic Motorcycle Oil 20W50 - this appears to be one of the best synthetics you can find. Synthetics will withstand hotter temperatures and allow for longer use before breaking down. You also usually have a much broader viscosity range allowing for the fluid to be thinner when cold and thicker when hot than conventional oils.
Trans - AMSOil Sever Gear 75W90 or any heaver gear oil - will smooth out shifting, and be better suited for the conditions of the gears.
Primary - Harley FORMULA+ - several people have recommended that I not run synthetic due to my higher torque engine build and clutch, you need lubrication but don't want the extra slipperiness generally provided by synthetics.
Engine Break-in, initially or after engine work, use standard HD oil. You don't want your cylinders too slippery during breaking so you don't get glazing. Metal needs to wear down for everything to mate up.
I am currently in "break-in" stage, after another 100-150 miles this spring, I will switch all three holes to the above mentioned mix and then dyno... but that's another post.

I honestly don't know whats the best...I do know that I have used Amsoil in the last three bikes that I've owned; Using 20-50 for the motor, 10-40 Primary and Sever Gear in Tranny......and I've never had an oil related problem. So in my head I think I am using the best. Of course there will be others on here that sware by what they use.
