Just thought I'd throw in my experience with my 21" rim.
I have the 2011 SB. Bought a custom 21" from Dayton. (I'm extremely lazy on my days off and didn't want to ruin my only means of transpo by building one off the stock hub). The rim I got was 21x2.5. Skinny. I definitely feel a crap ton more sketchy riding now. I feel every little microscopic groove in the highways, and when you're going 95 and hit a seam that wants to just, sorta, take you with it...well, that'll make your butt pucker. Every day gets a little better when riding, but I did have to change my whole riding style to accommodate. But, that's just me. Everyone will have a completely different riding experience.
Anyhow, the rim and tire fit pretty much exactly as the stock 19" did under the fender. No need for any fender mods. And, at the end of the day, most importantly; it looks good. Function be damned, if I'm going to die on my bike (I DO commute 150 miles per day in Southern California) well, I'm gonna look great going down!

I had mine spokes relaced to a 21" rim by Joe the powder pro then powdered black. Looks sick as hell and cost bout $200. As for the handling it's way better than the 19 cause the 21" metzler is wider than the stock 19 Dunlop. I love it!
Roland sands is coming out with the black brace that replaces the fender by next year which is gonna be even nicer.

For the thread / general info:
I ordered a 21 x 3.5 aluminum rim from Buchanan (unfinished)
...and had it powder coated.
...added some fancy S/S spokes, half polished, half coated
...got it all laced up
...mounted at 120x70x21 Metzeler 880. Looks like this from the side:

I reckon I'll swap to a Metzler next and see if that solves any of the issues. I did pay more attention to the ride today, and the best way to describe the ride now (after swapping to a 21") is that the front end feels "squishy". I constantly feel like I lost all air pressure or something, especially on turns at freeway speed.
