I live in the Minneapolis area, been here for about 35 years (don't ask why I stay) and I have learned over that time that this place is unnaturally devoid of the types of professionals you'd find in other regions. Tailors, leather customizers, upholsterers, hat makers, indie bike shops, hot rod shops, etc. I mean, there are a few and probably more that I don't know about but, growing up in Hawaii and living in L.A. and St. Louis if felt like I was never wanting for any of those things like I am here. So the short answer is I don't know of any, and if I found one I wouldn't trust them.

Whiplash Speed Co. Best seats on the market. I had a buddy with a saddlemen and he also said it sucked. They look good but aren't for riding more than an hour. Made more for stunt bros than folks who pack on the miles.
