It is actually quite the same with windshields, a lot of riders think the ride is wobbling, but in fact it is quite simply the wind hitting the shield and turning the forks, same applies to apes, only difference is you are acting as a sail, new bushings do help and also a tight fitting jacket.

It's not only the height, but, more importantly the width.
With wide bars, your hands can not disseminate movement as if they are/were closer together. Also, wider bars offer greater leverage to yoke movement. This sensitivity can cause instability if the hands aren't almost perfectly still. (Which they can never be, as long as you're alive anyway!)
So, the "fix."
The fix is to return to your previous set-up, or~
Add a steering stabilizer.
If you think it's you and not your bike, then get seen by your doc and have them check your nervous system for damage.
Things such as blood suger issues can cause tremers. TBI can too. Addiction withdrawal too. (Especially alcohol.)
