I purchased a 6 inch crossbones rim and had it laced professionally to the original hub. There were other cheaper rim options also if cost is an issue. This allowed me to fit a 200 tire on the rear with no modifications. There is no rubbing even after extended 90-115mph cruising for 60+ minutes. Iirc the tire is a Metzler Marathon Ultra 200/55/17.
I also changed the front at the same time to a 90/90/21 Metzler Marathon Ultra.
I personally would not lower the bike. I have hit the stops on the rear suspension when cornering hard and it is unpleasant (83kg) I would imagine it would really compromise my riding and also my safety margin by lowering the suspension further.
I am a confident rider, I lap at the front of the fast group on track days. All I can say is that the modifications made have transformed the wideglide. I have much more stability at high speed (wobble has gone) and more confidence in corners due to now getting a small amount of feedback.
I have not tried a 190 on a stock wideglide/streetbob rim. But I can tell you putting a 200mm on it was not good at all. I never rode it! It was so obviously not supposed to be on that 4.5 rim.

I fully agree with your observations; I wouldn't move past a 180/60-17 on the stock 4.5" wheel personally. With Night Dragons available there's no point to it; I'd rather a properly mounted Night Dragon than a pinched Avon Cobra And lowering the rear with now I love to play in the curves? Not a chance.
If you want to move past the 180 rear tire it's time for a new rear wheel...

Don't forget to check the tire manufacturer's rim width specification for ANY tire you're considering. The 180 Avon Cobra AV72 I'm running is made for a 5.0-5.5 inch wheel. (I have a 5.5) They make different 180 AV72's for widths from 4.0 thru 6.0. Fitment for other models and manufacturers will vary.
