2015 FXDWG adding sissy bar but what parts do I need?
Was going to add a sissy bar/backrest to my bike for wife's comfort
HD website is very confusing on what I will need for install
Which parts do I need? Specifically, do i need the turn signal relocation? And which docking hardware?

Why not install a Bowman Welding bar with passenger pad and save yourself a boat load of time and trouble?
If all you want to do is add a bar and passenger pad don't waste time with that HD overpriced nonsense.
A 16" passenger pad bar for your Wide Glide ready to be installed; add the pad and you're golden, no relocations or docking hardware needed, no drama; I've got their 16" non-passenger pad bar. High quality, USA made

This is the bar I used for my Wide Glide, absolutely first rate workmanship; the HD stuff? Meh...

You won't do a quick detach on the Bowman Welding bars; they're a direct replacement for the stock bar and mount exactly the same.
If your goal is to have a quick detach you may need to look at the HD offerings.
Personally, I'd go with the Bowman and just leave it on the bike permanently; their bars are beautifully made; the Wide Glide was made for a nice tall sissy bar, she doesn't look right otherwise

i still have this low/sideplate version if you are interested. you'll still need the hardware quoted above. the sideplates give you a ton of options
