I was wondering why you can't bore a 88 cubic incher to like a 110 or 112 like the screamin eagle dyna??

103's the biggest displacement???

I don't get it,,, someone let me know.

And anyone notice any difference between the 2?

its due to the thickness of the cylynder wall. You can only bore it out so much before it is too thin. For motors to go to the 103" or bigger, not only is the bore size increased, but the stroke as well.
If you have an '07 motor (which it looks like you don't), the CI increase was acheived, not be increasing the bore, but by increasing the stroke.
The advantage '07 owners have to this is that they can increase the bore to go to 103" or 110" without having to crack the case open to replace the flywheel (i.e. its suddenly a cheaper upgrade)

as far as the differences, I don't know. I can tell you the difference between a stock 96" and stock 88" are minimal

110" would require case boring on a 96".
You can take a 96" to 107" with an aftermarket kit (Rev Perf) without case boring.

107 cubes is definitely as big as ya can go with standard cases. Any bigger, 110,113,114,120,etc,etc, and ya cases are com'n apart, no doubt. Checked ya link and it says the same thing dude. If ya need confirmation, best to check the SE catalog. Have ridden a 107 Dyna with GMR heads and Andrews cams, 128hp-130ftlbs. Awesome is the only word.

ok so the stage one says nothing of case boring but the stage 2 says you need case boring? why is that
