No, you won't lose your fuel gauge
When I converted an 04 Ultra what I did was hit eBay to death for all used parts, including the wiring harnesses and ignition module. I used Ronnie's Microfiche to get part numbers for the harnesses and ignition module, then searched for them in eBay and found them really cheap. I also had to buy a special tank adapter for an OEM petcock, which I believe Pingle makes one (even though I used a Golan petcock).

Just completed EFI to carb. I removed everything inside the tank could care less if the fuel gauge worked I always go by mileage anyway. Or open the cap and look. Now I have room for more gas. Several companies make petcocks for EFI tanks but you will also need the adaptor that pingle makes to fit your tank. Youtube will come in handy.

I just converted my 2002 Road Glide to EFI from carb. On 2002 - 2005 models all you need is the separate wiring harness for either EFI or carb. As mentioned above, ronnies mail order parts manual is a great resource. I was able to get a 2003 tank, the fuel pump assembly, coil, wiring harness and throttlebody assembly from Fallen Cycles in Daytona. Great guys. If you want to convert to carb I have everything you need. I need to price it out but I have a 2002 tank with a Pingel. It's black and not perfect but very good shape. I was using a Mikuni HS42. I have all the jets and needles too. If you're interested I'll figure a price for the "kit".
