I've used a Sena 20S EVO and a 50S. The headset will not pair directly to the radio in the case of the AX7000. After looking at the bluetooth/bluetooth profiles of a number of aftermarket head units, it's my guess that you're not going to find one that will pair natively with a bluetooth headset - all the ones I've looked at don't have the required bluetooth profile(s). You can however pair to other headsets that your headset is capable of pairing to for bike to bike or rider/passenger.
As far as music goes - you'll need to pair the headset to your phone if you want to have that audio in the headset. Generally I prefer to hear my music through the bike speakers, but a lot of folks also go the headset route.
I have my iPhone 10 connected to the AX7000 via USB (Carplay) and my headset paired to the iPhone 10 via Bluetooth. Most of the time I can issue commands to the phone through the headset (Hey Siri - find gas stations near me, Hey Siri - play <insert song, album, artist name here), and have that come though to the AX7000 via Carplay but it isn't without it's quirks.
