Which amp?
Well I'm going to purchase the Infinity Kappa 6.5" 2-way Loud speakers. I'm doing this on a budget I've set for myself. Plus I have a few other items I'll be purchasing as well.
Stereo budget about $300
Infinity Kappa 6.5" 2-way Loudspeakers
amp kit
speaker adapter kit
now for the amp
Pbr300x2 or Pbr300x4 , the 4 channel is a tad cheaper. I don't plan on adding any other speakers. If I were to purchase the 4 channel can I bridge it and run it to the speakers without any issues?

You're going to want to stick with the 300X2 for several reasons. One is that you're not planning on adding any additional speakers. The X4 puts out fewer watts than the X2. The X4 is a 4 ohm only amp while the X2 is stable down to 2 ohms...the Kappas are a 2 ohm speaker. And no the X4 is not bridgeable. Go with the X2. It pairs very nicely with the Kappas.

Since you bought it new, if you buy the RF amp install kit (also available on amazon) it will give you an additional year of warranty for free. It's a decent kit (the 10 ga cable actually looks like 10 ga instead of some of the other kits out there) and the red cable is plenty long enough to cut in half and use for both pos/neg and run the ground all the way to your battery.
