The Street Bob uses the same swingarm as the Sport Glide. The Sport Glide comes with a 180/70-16 rear tire. After you said you were going to a 200 mm tire I got curious as to whether that was an option for me on the stock rim, which I think is 5" wide. 200 mm requires a minimum of 5.5" wide rim, so I think not since I do not want to purchase different wheels.
Going to a 180/60-16 tire is going to reduce your tire diameter by .9". This will result in about a 2.5 mph reduction in speed at 2660 rpm which is about 70 mph with your current gearing. Going with a 180/65-16 tire will reduce the diameter .2" and will result in .5 mph reduction.
At least you do have clearance for the brake caliper. I have not removed the rear wheel on my Sport Glide yet, so I don't know how much of a hassle it is. On an older bike that I have worked on, I have had to modify the brake caliper when installing custom wheels to get clearance.

My Mistress got new shoes today as well. Disregard my previous post. As a friend reminded me, ThunderBikes uses 200/60-16 ME888s on their SBs sometimes, so I bit the bullet and figured the worst that could happen is I have to buy a different tire. Well, it fits wonderfully well. Also put on the custom 5.5” DNA wheel with rotors that match the front wheel. Also, a black powder coated pulley. Lots of black going on back there.
so for those wondering, yes a 200 does fit in our swing arms…I rode it and it is all good. Need to put more thought into counter steering to get the bike to the right lean angle but no sweat. I also put on the Paul Yaffe Fixstand, which works great at improving the lean angle for lowered bikes, but it has made the kick stand the first thing to scrape in the corners…
