16 RGU with GTS and used the CPLAY2air, plug the module into the USB and set up was nothing. Now it automatically "pairs" to my phone and carPlay shows up (without plugging phone in or doing anything) in under a minute after ignition is turned on... should have gotten one for my truck lol

I don't have WHIM & haven't used a headset in I don't know how long... but just for you I plugged a set in, in the garage lol
My "hey Siri" is set up on my phone only for side button press, so consider that in the rest (it's not set to listen for "hey Siri").
Turned the bike on, let it connect CarPlay wirelessly, then went to "Audio Routing" on the GTS and switched everything to headsets... and plugged in a headset.
From the basic CarPlay screen (like in my first pic above), I pushed the "VR" button on the bike and got a Siri prompt, told it to call somebody and it did. Talked to that person and told him to send me a text when we hung up.
Got the text read to me, and I responded to it by speaking into the mic, and sent it. AlsoI just pushed the VR button and told it to send a text to somebody and it did. So there's that...
I did not go into the Harley Navigation and test there, I assume it would work too, only in Harley's way.

I use Android and my phone doesn't fit into the small pocket of my RGU. So I bought a 10' USB data cable. I've routed that into the tour pack. Plenty of room now and don't have to worry about the phone getting damaged. Spent $25 on the cord and a few hours removing parts to run the wire on the backbone. Sometimes you have to use the KISS system. As far as using the talking portion when I wear a helmet with an S10 I'm still able to answer the phone through Android Auto.

Volume with wireless AirPlay is the same as usb cable. Try turning the volume on your phone all the way up when connected via bluetooth. When connected via bluetooth, you can use the volume on your phone and the bike to control volume.
