Camp Foods – Hillbilly Fish

HDForums-brook-troutI really don’t know why this is a called Hillbilly Fish but I don’t always name the recipes we share. What I will say is the addition of dressing to the cooking of fish is a tasty topping and really adds some flavor to your meal.

Ingredients: 

  • fresh caught fish
  • 1 small onion
  • 2 potatoes
  • 2 carrots
  • 1 zucchini or squash (optional)
  • salt and pepper
  • salad dressing

Equipment: 

  • heavy duty aluminum foil

Preparation: 

Clean, gut, and scale your fish, but otherwise leave it whole. Slice up the veggies. Wrap the fish, along with the veggies and spices in foil. Place a liberal amount of salad dressing on the fish and veggies. Italian is best, but Ranch, Raspberry, or just about any flavor will do. You really can’t go wrong.

Close the foil tightly so no steam escapes during cooking. Place on medium heat grill or on coals. Cook gently until potatoes and carrots are cooked. The salad dressing will help steam the veggies and add an extra flavor to the fish.
