I have a 2011 Merlot Sunglo Road King... Its definitely got metal flake and your right about the look in the sun (red from most angles but a definite flash of green/gold from just the right angle). Out of direct sun tho it almost looks like a metallic root beer brown.

Merlot Sportster here. I also have noticed the red/brown appearance, depending on the light, but will be looking for green in the future (throwing down with rain at present!). I also own a candy hi fi blue Glide. These paints are wonderful in the 'flesh' but are also one of the reasons our bikes cost so much when new. Getting them to look right is quite a skill.
Your painter needs to get the lowdown on your paints and how to apply them from someone who knows how to paint them, in 'painter-speak'! I don't see him getting things right by chance.

harley uses ppg global system
my brothers bike is the same color
now of it was a ppg dbc system i could match it with just base coat no need for the mid coat at all
now
what you guys see is actually called a tri-coat or a candy color
with tri coats we shoot a base then a mid coat which usaually is a mid coat clear with base or mettalic
candy colors start with
black gold silver and sometimes white
then the transparent mid coat goes over the base
never ever is pearl or base mixed in with the actual clear. clear coat is not meant for that
thats why we use a mid coat clear that is meant to have base mettalic mixed in it
it is not meant to be used as a top clear coat at all!!!!!
so in closing yes it has allot of mettalic in the color

example
ppg dbc system
dbc 500 dt reducer
1:1
then you add either mettalic or a tint we use to mix paint with
the more you spray the more the color will change along with the mettalic
so lets say im doin a custome tri coat white
ill spray the base coat
then ill mix my mid coat. with lets say blue pearl
now
pearl is a very very highly concentrated product and it does not take allot of it to achieve color or the effect your looking for
so
if i want it more bluer ill spray more mid coat if i want it whiter ill spray lets say 2 coats if mid coat
see wut im saying
now
color and or mettalics and candies look like its changing color is due to the different pearls and mettalics that are mixed into the base coat
