I guess I'm not sure why you all are afraid to change out the needle? I rejetted my carb with the Yost kit changing the Spring, Needle jet, the pilot jet, main jet, and the emulssion tube as well as drilling the vacuum port on the slide to 1/8". I still get good fuel milage (between 42 and 48) and have all the power in the world at the flick of the wrist. The reason for the needle jet change is to get rid of the mid-range power flat spot.
IMO the Yost kit is worth EVERY penny.
Oh FYI I run a 45 pilot, 185 main, and the blue needle for a forcewinder A/C and Samson Rip saws.

I did the same thing pretty much with the CV Performance Kit. Made a big difference. Twist the throttle and hang on. Fock Mikuni. lol j/k. Like BT says, there is no need to fear it.
I'm at 48 pilot, with a home made 194 main. I stepped drilled the 190 to a 194 till the plugs were perfect. Soon as I pick up the 2 to 1 exhaust I have my eye on I'll put it too the Dyno and go for the big numbers.

We're at about 900 ft elevation here, and unfortunately i run an 883 not a 1200,and after alot of testing i finally settled on a 48 pilot,175 main,n65c needle and shimmed it 47 thou.
Se11's with the packing removed,Se air cleaner
No lean backfires and considerably more power.
As far as opening up the top of the carb and removing the diaphram,,unless you are a ham fisted caveman and are all thumbs and consider fine tuning, hitting the carb with a hammer, the most difficult part will be loosening the throttle cable bracket.
Good luck,,you"ll end up with a great deal of personal satisfaction after doing this one.

Tuned to the drag pipes, at WOT that sucker accelerates like a 2 stroke.
Makes me wish I had a longer swingarm. lol

Sweet! Sounds like you had better hang on to that thing TIGHT!
To the OP, Don't fear the carb. Read up as much as you can and go for it! The biggest side effect should be a wider grin everytime you twist the throttle. There is nothing like doing a 5th gear roll on to pass a slow moving vehicle and doing 80 when you get around said vehicle (starting at 45MPH riding 2 up).
Here's a couple of links that proved useful when I rejetted my carb...
