Well I thought about that but if our state ever decides they're going to test bikes (I live on the "left" coast) I'd like to have the take-offs to put back on again.
On the dyno I lost 4 ft lbs of torque when I went to true duals on the '08, I can't tell when riding it. However, not once this summer did it get too hot to ride, it made a huge difference! Last year I had to shut the motor off a couple of time.
Been running V&H True Duals and can't really notice a ny type of loss. They do sound awesome and as somebody else noted, it's a bagger, not a drag bike.
I look at the 2:1 systems differently.

I asked myself a question when I was building my SG motor.
"Why am I building a motor for power when I reduce the power using a true dual?"
I couldn't find a reasonable answer so I went with the Bassani Road Rage 2:1 system.
I know the true duals look better, more balanced...but if you are now, or will ever, "hot rod" your motor...I say save the money and buy a pipe once, go with the 2:1 system.
Your bike will be louder especially since you are changing the cams too. When I went from my stock headers with Samson slipons to V&H dresser duals and added the cams, my bike became too loud. It was much louder. It was so loud I had to change out the slipons. Some say the Monster Ovals are not loud enough, but with dual headers and cams, they sound great! Plus with a little more back pressure from the MOs gives back some torque.

I reckon the true duals v 2 into 1 difference is an internet myth. It is quite likely that if we take the same bike and dyno it to dial it in to each system there will be a difference between the two setups, but I doubt if it will be enough to argue over.
I have an S&S 107 and before installing it asked S&S what systems they recommended for it and true duals was one of their options. On the dyno I get slightly better figures than they give in their catalogue and a similar shape torque curve. I am very happy!
Go with which ever system you fancy most. True duals will be great. Just don't expect it to behave as popular myth says it will!

Like other have already said, the difference is little. I had true duals before and after my build. After the dyno with TD, my no's. were 92hp and 108tq. After I put on the 2 to 1 TH I gained 2 hp and 2 lb's tq and a lot of noise.The TD I had were V&H with Wild Piggs, and the sound was kinds tinnie, but load. The TH are just load, but in a deeper way. I will have to admit the heat was not as bad with the TD as it is with TH.
