I've wondered this same thing about my wifes 05 superglide. When I replaced my rear tire on my softail I went to a 160 and next time around I plan to squeeze a 170 in there. I have been wondering what will fit on hers though. From what I have read you need some stabilizers if you go too much wider. Due to flex in the frame, your rear tire actually moves a little when you lean in a turn which can cause it to rub.

I got 12k out of my stock Dunlop and I wasn't riding like a wus either.

The only thing that might rub would be the tire to the fender but there would have to be a lot of flex. I don't think the isolators allow that much movement.

You can gain a little extra clearance by using T-Nuts for the fender bolts.

This will allow you to gain almost 1/2" on each side. You may need to drill the holes in the struts.
