I could answer this sooooooo many ways. May I suggest looking it up in Google. Green Chili is a big part of NM agriculture. It's also grown in Texas and Arizona and enjoyed by many in the Southwest. (we'll even toss in California and Colorado.) Other parts of the country eat it but not as much or with the same zest as the Southwest.
What do you think of a Canyon/Gorge run this year? We can start at Taos (Michael's for Green?)...cross the Rio Grand Gorge Bridge...run up to Canon City, CO and cross the Royal Gorge Bridge...head west up the Arkansas River Canyon...drop down the west side of Monarch Pass to the Black Canyon Gorge (maybe eat some bull nuts in Gunnison?)...head over to Glenwood Springs (naked pool side romp?) up the Colorado River/Glenwood Canyon...turn around head back to Grand Junction...maybe to Moab, UT...down to Arches...So. Utah...head back to Farmington, NM????? Or something like that?

Sounds like a trip to me. I guess we can start working on it with that in mind. We will need a little time in Taos for all the Vets to make the Enchanted Circle and see the Memorial. We could also go down the Cimmaron Canyon and take the back road from Trinidad to La Veta. That is one nice ride.
